Head of Culinary – Boutique Hotel Mumbai & Resort Pre-Opening Lonavala

Position: Corporate Chef
Location: Mumbai, India (with extended responsibility for restaurant operations and pre-opening resort in Lonavala)

About the Role:
Éclat Hospitality is seeking a visionary Corporate Chef to lead the culinary operations of our upmarket boutique hotel in Mumbai. This dynamic role spans three major responsibilities:

  • Mumbai Boutique Hotel – Leading the flagship property’s culinary operations.

  • Restaurant Operations – Managing the hotel’s signature restaurant to ensure consistency and innovation.

  • Pre-Opening Resort in Lonavala – Spearheading the setup, menu creation, and operational readiness for the resort.

Key Responsibilities:

  • Menu Innovation & Design: Craft diverse, trend-forward menus aligned with guest preferences and brand identity.

  • Culinary Operations Leadership: Direct daily kitchen functions, ensuring flawless execution, presentation, and consistency.

  • Recipe Development & Standardization: Establish signature recipes and train staff to maintain excellence.

  • Team Development: Mentor chefs and kitchen staff, fostering creativity, discipline, and growth.

  • Food Cost & Vendor Management: Optimize food costs while sourcing premium ingredients.

  • Hygiene & Compliance: Uphold the highest standards of food safety and sanitation.

  • Cross-Department Collaboration: Partner with F&B and Events teams for seamless guest experiences.

Requirements:

  • 5+ years of experience as a Corporate Chef or Executive Chef in luxury boutique hotels or fine dining establishments.

  • Expertise in Italian and Continental cuisines, with strong knowledge of international culinary techniques and evolving food trends.

  • Proven leadership in managing and developing high-performing culinary teams.

  • Strong organizational skills to manage multiple priorities across locations.

  • Excellent communication and interpersonal skills.

  • Culinary Arts degree/diploma preferred.
